Pine: A Taste of Northumberland’s Landscape

Nestled in a lovingly restored old cow barn overlooking the sweeping Northumberland countryside and Hadrian’s Wall, Pine is the debut venture of chef Cal Byerley and his wife Siân Byerley. Offering an intimate yet immersive dining experience, Pine utilises ingredients from its on-site kitchen garden or foraged from the Northumberland countryside to create a tasting menu that celebrates the finest British ingredients.

Cal Byerley & Ian Waller | The Chefs

Rooted in Northumberland’s farming heritage, Cal Byerley draws inspiration from the same landscape his family has farmed since 1805. Together with his long-time friend Ian Waller, whom he met while working at Grasmere’s Michelin-starred Forest Side, Cal co-creates Pine’s thoughtful and ever-evolving menus.

Working hand in hand with nature, the duo craft dishes that celebrate the changing seasons. Ingredients are foraged from the surrounding countryside or harvested from Pine’s own kitchen garden, showcasing the best of Northumberland’s produce. Their shared philosophy of using the finest local ingredients, embracing head-to-tail butchery, and employing time-honoured preservation techniques ensures a dining experience that is both sustainable and deeply rooted in place.

Siân Byerley | Operations Manager

Born and raised in Newcastle, Siân Byerley brings over 16 years of hospitality experience and a lifelong passion for fine dining to her role as Pine’s Operations Manager. Her career began aboard the prestigious six-star Seabourn fleet, where she worked alongside world-renowned chefs, including the celebrated Thomas Keller. After returning home to the North East, Siân joined Kenny Atkinson’s Michelin-starred House of Tides, where she discovered her love for nurturing talent and developing others.

Her dedication to hospitality education led her to teach and inspire the next generation of industry professionals before co-founding Pine. In 2022, her leadership and influence were recognised when she was named one of CODE Hospitality’s Top 100 Most Influential Women in Hospitality, as well as a finalist for the Institute of Hospitality’s Restaurant Manager of the Year. Today, Siân leads Pine’s front-of-house team with warmth, grace, and a genuine passion for guest experience.

Vanessa Stoltz | Restaurant Manager & Head Sommelier

Hailing from France’s Alsace region, Vanessa Stoltz brings a deep-rooted love and knowledge of wine to Pine. Raised among vineyards and inspired by her father’s cellar, Vanessa’s early curiosity blossomed into a lifelong pursuit of flavour and aroma. After honing her skills in the vineyards of Sancerre and the Loire Valley, she moved to England to further her sommelier career, working at Hipping Hall and later Forest Side under esteemed sommelier Charles C. Brown.

Her intuitive understanding of food and wine pairing earned her national recognition in 2018, when she and her partner Ian Waller won the Champagne Gosset Matchmakers Competition. At Pine, Vanessa’s passion for hospitality and storytelling through wine creates an unforgettable dining experience, seamlessly blending French elegance with Northumberland’s rustic charm.

Co-created by Cal Byerley and Ian Waller, Pine’s menu is a celebration of the finest British ingredients, with much of the produce sourced directly from their on-site kitchen garden or foraged from the surrounding Northumberland landscape. This deep connection to the land means the menu can evolve daily, ensuring each visit offers something new and exciting.
