The Finest Eats | Vetch

Vetch: Nordic-Asian Dining in the Heart of Liverpool

Tucked away on Liverpool’s historic Hope Street, Vetch offers a 26-cover dining experience that’s relaxed yet refined, serving seasonal modern British dishes shaped by Nordic and Asian influences. Guided by the belief that food is meant to bring people together, Vetch steps away from the usual formality of fine dining, placing the emphasis firmly on what counts: great food and great company. Since opening, it has gained notable recognition, including a Michelin Guide listing, an AA Rosette for Culinary Excellence, and a ‘Very Good’ rating from The Good Food Guide.

With its rising reputation and inventive culinary perspective, Vetch is fast becoming one of Liverpool’s most compelling dining destinations.

Inside Vetch

Behind it All: Head Chef and Co-Owner Daniel McGeorge

Head Chef and Co-Owner Daniel McGeorge boasts an impressive history of accolades and a career shaped in some of the Lake District’s most celebrated luxury hotel kitchens. After winning The Great British Menu in 2021 and receiving the Craft Guild of Chefs’ Restaurant Chef Award in 2022.

Daniel didn’t take the most conventional route into cooking, leaving a law degree to pursue chef training at Liverpool Community College, later honing his skills under respected names like Simon Rimmer, Sam Moody, and Ben Mounsey. His leadership at Rothay Manor earned him a third AA rosette, an Acorn Award, a Michelin Plate, and wide industry recognition. Now, back in Liverpool, Daniel channels his experience and passion into Vetch, shaping a menu rooted in thoughtful, produce-driven cooking.

A Taste of Vetch

Guided by a commitment to sustainability and small-scale producers, the menu changes frequently, showcasing carefully sourced local ingredients treated with precision and creativity. Thoughtfully curated wines, low-intervention bottles, and inventive non-alcoholic pairings complement the food, while the attentive yet informal service ensures the experience feels both special and welcoming.
