Together with executive chef Paul Burgalières and head chef Alex Rothnie, Rogan has crafted a truly immersive dining experience. Every ingredient served at L’Enclume begins its journey at Our Farm, just minutes from the kitchen – a regenerative, organic landscape where the team constantly evolves its growing methods in harmony with the soil and the seasons.

Each dish at L’Enclume is the result of an ongoing conversation between chefs and growers, with ingredients sourced from the farm, foraged from the wild, or provided by a trusted network of local artisans. Culinary creativity takes shape in Aulis Cartmel, the restaurant’s dedicated development kitchen, where ideas are tested and transformed into the award-winning tasting menus that define the L’Enclume experience. Guests can choose from an intricate, multi-course tasting menu available for both lunch and dinner, or opt for a more relaxed midweek seasonal lunch menu, offering a lighter yet equally refined window into the restaurant’s ingredient-led ethos.

As one of just ten restaurants in the UK to hold three Michelin stars, L’Enclume has redefined modern British cuisine on the global stage. It was awarded joint first place in La Liste’s World’s Best Restaurants rankings in both 2024 and 2025, making it the first British restaurant to achieve this distinction. In the same spirit of excellence, Valentin Mouillard, group head sommelier, was honoured with the 2024 Michelin Sommelier Award, celebrating the depth and precision of L’Enclume’s wine programme.
